Basil Chicken (with rice)

prep time: 25 min
cook time: 12 min
total time: 45 min

ingredients:

Place in separate bowl: 1 yellow/Vidalia onion, chopped into slivers
Place in separate bowl: 1 bunch Thai/holy basil, leaves only, chopped
Place in separate bowl: 12-15 cherry/grape tomatoes, halved
Place in separate bowl: 2-6 garlic cloves, depending upon preference, minced
6-12 Thai chilies, depending upon tolerance, stems removed, minced
1 stem lemongrass, white part only, finely minced
Place in separate bowl: 2-3 chicken breasts, cut up and chopped with cleaver or big knife into little crumbles

Cooking sauce:
2 T. palm sugar (or brown sugar/raw sugar)
1 T. black soy sauce
2 T. regular soy sauce
2 T. fish sauce
juice of 1 lime

directions:

Rice (prepare first)

1: 1 1/4 c.
jasmine rice, rinsed w/cold water until it runs out clear
2: 1 3/4 c. water
3: bring water to boil over med-high heat, when water comes down to level of rice, cover and steam undisturbed for 25 min.

Main dish

1: Heat 1 1/2 T. oil in wok to high heat
2: Add garlic/chili/lemongrass mixture and stir a few times
3: Add chicken and cook 3-4 min. (or until no longer pink), mixing and separating crumbles
4: Add onion and cook until just beginning to soften
5: Reduce heat to medium
6: Mix sauce well and add to wok, cook till bubbly
7: Remove from heat, add basil and mix well
8: Mix in tomatoes and serve immediately over rice

Favorite Indian... I love Biryani, Malai Kofta, Saag varieties. Its too hard its all so nice! Nothing beats fresh hot naan either.

Green curry is the best thai curry IMO

Polish food is generally the hunter's food. We do love stews (with http://en.wikipedia.org/wiki/Bigos being our national dish) and meat prepared in specific way - the best example of that is probably Schabowy (specific kind of Shnitzel). Still, the general rule of the thumb is that we put everything we can find in our fridge into single pot and try to make it eatable. And that's probably the way how we cook.
While the traditional polish addition to meat were usually potatos, lots of young people (like me) prefer rice or pasta - as boiling potatos just takes too much time.
I dig all kind of asian and italian food as well. <3

Still, I wouldn't be myself if I wouldn't make all of you feel disgusted when talking about life in Poland. So here's another story.
I live in the city of Lodz. For unknown reason, Vietnamese fast-foods
became extremally popular in here. There are thousands of them - and they prosper well as they serve food at really low costs (let's say - to make a dinner I'd need around 5$. They offer their already-prepared stuff for 3$). BUT few years ago there was a huge scandal.

The owners of those fastfoods were actually using Pidgeons instead of chicken when preparing most of their dishes. So yeah, pidgeons who eat nearly everything and generally spread all kind of diseases.
There were also rumors about dogs and cats being involved but never got confirmed.
Still, since that time - they are like triple-checked by the authorities, so I doubt that's ever gonna happen again.

Whenever I'm asked to prepare something cool to eat - here's my little recipe.

Chicken, Corn, Red Bean, Pepper, tomato-based sauce (you could even use some cheap Spagetthi sauce as base), something to spice this shit up.
Fry up the chicken, put it into pot, mix it with everything else, cook it untill it looks
fine and meat got the aroma from the rest. Serve with anything.
Here ya go son, you got some kind of shitty mexican stew for you and your grlfrnd.

These are the best kinds of recipes. I spent like 8 hours working on soup the other day. A little of this, a little of that, some more of this, that thing... Best chicken noodle soup I've ever eaten. I didn't even have a whole chicken, nor thighs, just boneless skinless breasts. So I had to make the stock exceptional.

Found this little gem at the farmer's market. We already have French, Russia and Italian salad dressing. Guy was selling what he called "American" salad dressing.

I kid you not, it was BBQ sauce.

I just had the most glorious serving of bacon. I didn't take a pic of it, and I don't think anything on the internet could do it justice, but the strips were all very fatty and thick, and were cooked in a way that made meat turn a great red color, yet most of the fat didn't just shrivel away and the meat was actually pretty chewy (I like it that way). As always, the second batch was better than the first, since it was cooked in the oils from the first one. The bits stuck between my teeth right now still have some taste to them, and I'm feeling great right now.
